To make the most of these last summer nights, try our Evans & Tate Classic Chardonnay paired with this delicious light flavoured dish, aptly titled by WA Chef Don Hancey.

“Few grape varieties enhance the texture of a dish in the same fashion as a glass of Chardonnay. We’re not sure if it’s due to the complexity of the flavours, the addition of oak or the natural viscosity of the fruit. We do however know that it’s a winner every time. The muted use of seasoning on the chicken allows for the grains and pulses to make a statement without dominating the dish. The use of pomegranate ties everything together; however it is the mouth feel and texture of this dish that you will remember long after you clean up the plate.  As culinary phenomenon go, it’s hard to explain but easy to enjoy.” – Don Hancey.
